Portion
To burn it off

Risotto is arborio rice cooked slowly in stock, finished with butter and parmesan until it's creamy. Mushroom is the one everyone orders, but the base is the same.
A plate is 550 kcal, with 75 g of carbs, 20 g of fat and 14 g of protein. The creaminess is mostly butter and cheese, not cream.
A restaurant plate can be bigger and richer than the one you make at home. Garlic bread on the side is a second meal.
Tips
- 1Add chicken, prawns or peas for more protein and more filling power.
- 2Go lighter on the butter at the end and let the parmesan do the job.
- 3Have a side salad instead of bread.
Where it comes from
Risotto comes from northern Italy, from the Po valley, where rice grew well in the wet lowlands. It was only written down in the early 19th century, then described as a kind of pudding, and the name simply comes from riso, rice. A legend says Holy Roman Emperor Frederick I called it risum optimum, the best rice, but the name more likely grew from everyday speech.
