A schnitzel is a thin cutlet of pork, veal or chicken, coated in breadcrumbs and fried. Wiener schnitzel is the veal one, but pork is what most places serve.

Where it comes from
The story goes that Field Marshal Radetzky brought the breaded veal cutlet to Vienna from Milan around 1857. Historians doubt it: Austria's own tourist board notes that Wiener Schnitzel is first mentioned in Austrian cooking in 1831, and a linguist later showed the Radetzky tale only turned up in 1869. Schnitzel simply means a small slice in German.
