Tips
Where it comes from
Panna cotta means cooked cream, and it is linked to Piedmont in northern Italy. One story says a Hungarian woman in the Langhe hills invented it in the 19th century, but nobody has proved it. A similar mix of cream, sugar and gelatine was printed in 1879 as latte inglese, English milk, and chef Ettore Songia put panna cotta on his menu in Cuneo in the 1960s.
