Where it comes from
Soto comes from Java, and historians think Chinese cooks helped shape it. The French historian Denys Lombard traced it to caudo, a Hokkien tripe soup popular among Chinese settlers in Semarang from the 1600s, and the name soto may come from that word. The turmeric points to Indian influence, and soto ayam is simply the chicken version.
