Bakso is Indonesian meatball soup: bouncy beef balls in a clear broth with noodles, greens and fried shallots. You hear the carts before you see them.

A bowl is about 390 kcal, with 25 g of protein, 40 g of carbs and 14 g of fat. The broth is light, the noodles and meatballs are the bulk of it.

Fried wontons and extra noodles on top are where it climbs. A plain bowl is a pretty reasonable lunch.

Tips

  1. 1Skip the fried wontons and crackers on top.
  2. 2Ask for fewer noodles and more greens.
  3. 3Add chilli and lime instead of sweet soy sauce.

Where it comes from

Bakso was brought to Indonesia by Chinese cooks. The name probably comes from the Hokkien bak so, roughly minced meat, and the first versions were made with pork. As it spread to Indonesia's mostly Muslim population it became a beef, chicken or fish dish, and some food historians think the Dutch colonial kitchen shaped the meatball too.
