Tips

- 2Share a plate with a side of extra veg if you've got a big dinner planned.
- 3Have it at lunch like the locals, then keep dinner lighter.
Where it comes from
Babi guling grew out of Balinese Hindu ritual. A whole spit roasted pig is part of the offerings at temple ceremonies and festivals such as Galungan, and once it has been offered it is shared and eaten as a blessing. Guling means turning, after the way the pig is rotated over the fire. The dish stayed in Bali because, unlike most of Indonesia, the island is mainly Hindu.
