To burn it off

Pho is Vietnamese noodle soup: a clear broth simmered for hours, rice noodles, thin slices of beef and a pile of fresh herbs, lime and chilli on top.
A big bowl is 450 kcal, with 30 g of protein, 55 g of carbs and 10 g of fat. The broth itself is light, the noodles bring most of the carbs.
For a whole meal in one bowl, that's on the lighter side. The hoisin and sriracha you squirt in add a little, mostly sugar.
Tips
- 1Load up on the herbs and bean sprouts, they fill the bowl for next to nothing.
- 2Leave some of the noodles at the bottom if you're full, the broth is the best part anyway.
- 3Go easy on the hoisin, a squeeze is plenty.
Where it comes from
Pho appeared in northern Vietnam, near Hanoi, in the late 19th century, when the country was a French colony. Most food historians think villagers added beef, which the French ate far more of, to a local noodle soup. The name may come from the French feu, as in the stew pot au feu, but it may just as well come from the Chinese fen, a flat rice noodle.
