Portion
To burn it off

A bowl of ramen is 650 kcal, with 75 g of carbs, 28 g of protein and 25 g of fat. The noodles are the carbs and the broth carries the fat.
Rich tonkotsu broth is the heavier one, as it's made from pork bones simmered for hours. Shoyu and miso are a bit lighter.
Pork belly and an extra egg add more, and so does finishing every drop of broth. Leaving some in the bowl is the easiest saving.
Tips
- 1Leave some of the broth at the bottom of the bowl.
- 2Pick shoyu or miso over tonkotsu if you want it lighter.
- 3Add extra veg or greens as your topping.
Where it comes from
Ramen came to Japan from China. In the early 1880s Chinese traders settled in the port of Yokohama and opened restaurants serving wheat noodles in broth, and the name comes from the Chinese la mian, pulled noodles. Japan's first ramen shop, Rairaiken, opened in Asakusa, Tokyo, in 1910 and could sell 3,000 bowls on a busy day. Instant ramen followed in 1958.

Questions
Is instant ramen the same?
No, a packet of instant noodles is a smaller portion and a different recipe, so it's not the same number.
Does drinking the broth add a lot?
Yes, that's where much of the fat is, especially in tonkotsu.
Is ramen high in protein?
A bowl has about 28 g, from the meat, the egg and the noodles.
How many calories does the egg add to ramen?
A soft boiled marinated egg is about 80 kcal, with 6 g of protein.
Is vegan ramen lower in calories?
Often a bit, as a vegetable or miso broth has less fat than a pork one. Creamy versions made with sesame or soy milk can be just as rich.
