To burn it off
Miso soup is dashi stock with miso paste stirred in, plus a few cubes of tofu, seaweed and spring onion. It comes with most sushi sets.
A bowl is about 40 kcal, with 3 g of protein, 5 g of carbs and 1 g of fat. It's warm, salty and barely there.
Have it at the start of a meal and it takes the edge off your hunger. The instant sachets are about the same.
Tips
- 1Start with miso soup before the sushi, it's filling for very little.
- 2Add extra tofu and greens to make it a light lunch.
- 3Keep a box of sachets at work for a warm afternoon snack.
Where it comes from
Miso goes back to a Chinese fermented paste, called hishio in Japan, that reached the country around the 7th century. Miso soup came later, in the Kamakura period (1185 to 1333), when mortars from China let people grind the lumpy miso smooth enough to dissolve in hot water. Samurai then ate it daily in the meal called ichiju issai, one soup and one dish.
