Where it comes from
Stir frying noodles is a Chinese technique, brought to Thailand by Chinese immigrants. In 1942, with rice paddies flooded, Prime Minister Plaek Phibunsongkhram's government urged people to eat noodles instead, handing out recipes and carts to street vendors. The name pad thai, simply Thai stir fry, first appears in print in a 1962 household manual, says historian Chatichai Muksong.

Questions
Is pad thai healthy?
It's a filling meal with some protein, but quite rich from the oil and sauce. Portion size matters most.
How many calories in half a pad thai?
About 154 kcal.
Which Thai dish is lighter?
Something with more veg and less noodle, like a stir fry with rice, is often lower.
How much do the peanuts on pad thai add?
A tablespoon of crushed peanuts is about 50 kcal. Leaving them off saves that, but the noodles and the oil are the bigger part.
Is pad thai gluten free?
The rice noodles are, but the sauce can contain soy sauce or oyster sauce made with wheat. If you need it gluten free, ask the restaurant.
