Where it comes from
Shawarma comes from the Ottoman Empire, where seasoned meat was stacked and roasted on a turning spit. Ottoman texts called it çevirme kebabı, turned kebab, and çevirme became shawarma in Arabic, while Turkish later switched to döner. Lebanese emigrants took it to Mexico, where it turned into tacos árabes in the 1930s and then tacos al pastor.
