A portion of tabbouleh with lots of chopped parsley on a white plate

Tabbouleh is a Lebanese salad, and it's mostly parsley. Finely chopped, with mint, tomato, spring onion and a little bulgur, dressed with lemon juice and olive oil.

A portion is 150 kcal, with 15 g of carbs, 9 g of fat and 3 g of protein. The parsley costs almost nothing, so the olive oil is most of the number.

In Lebanon it's part of the mezze, eaten with lettuce leaves to scoop it up. The versions with lots of bulgur, more like a grain salad, are a bit higher.

Tips

  1. 1Make it the Lebanese way, heavy on parsley and light on bulgur.
  2. 2Add the lemon first, then the oil to taste.
  3. 3Scoop it up with lettuce leaves instead of bread.
