A portion of golden crisp rosti on a white plate

Rösti is grated potato fried in butter or fat into one flat, golden cake, crisp outside and soft inside. It started as a farmers' breakfast near Bern and now goes with nearly everything in Switzerland.

A portion is 400 kcal, with 5 g of protein, 24 g of fat and 40 g of carbs. The potato is the carbs, the frying fat is nearly all of the fat.

Toppings change it fast: a fried egg, melted cheese or bacon on top all add their own. The border between German and French speaking Switzerland is jokingly called the Röstigraben, the rösti ditch.

Tips

  1. 1Fry it in a good non stick pan with less butter.
  2. 2Have it as a side to share, not as a whole portion each.
  3. 3Top it with a fried egg instead of cheese and bacon.

Just type it
