Cauliflower is mostly water and fibre. A portion has 5 g of carbs, 2 g of protein and no fat to speak of.

That's why it turns up as rice, pizza bases and mash. It takes on whatever flavour you give it.

Cauliflower cheese is a different story, because the sauce does most of the work. The florets underneath are still 25 kcal.

Tips

  1. 1Roast florets with a little oil and spice until the edges go brown.
  2. 2Mix half cauliflower into your mash and nobody at the table will notice.
  3. 3Make cauliflower cheese with a lighter sauce and more veg per spoonful.

Where it comes from

Cauliflower was bred from the same wild plant as cabbage, probably in the eastern Mediterranean. Arab botanists of the 12th and 13th centuries said it came from Cyprus, and Western Europe bought cauliflower seed from the island until well into the 1500s. It reached Italy around 1490, and the name comes from the Italian cavolfiore, cabbage flower.
