Pulled pork grew out of Southern barbecue. The word comes from barbacoa, the Spanish name for the wooden frame the Taíno of the Caribbean cooked on, and Hernando de Soto brought pigs to the American South around 1540. In the Carolinas, cooking whole hogs and shoulders slowly over coals became a tradition long before anyone called it pulled pork.
