To burn it off

Enchiladas are tortillas rolled around chicken, beef or beans, covered in chilli sauce and cheese and baked. A Mexican classic and a midweek tray bake favourite.
Two are about 600 kcal, with 30 g of protein, 45 g of carbs and 33 g of fat. The cheese on top and inside brings a lot of the fat.
With rice, beans, sour cream and guacamole on the side, a Mexican restaurant plate gets to a lot more. The enchiladas themselves are a reasonable dinner.
Tips
- 1Go lighter on the cheese on top, the sauce carries the flavour.
- 2Fill them with chicken and beans instead of beef and cheese.
- 3Swap sour cream for a spoonful of yoghurt or extra salsa.
Where it comes from
The Maya of the Yucatán were already rolling tortillas around fillings and covering them in sauce long before the Spanish came. In 1519 in Tenochtitlan, conquistador Bernal Díaz del Castillo saw the Aztecs eat tortillas dipped in chilli sauce, a dish called chīllapīzzali, chilli flute. The Spanish name comes from enchilar, to season with chilli.
