Where it comes from
The oldest known recipe for cheese melted with wine, with bread dipped in it, is in a book printed in Zurich in 1699, under the name Käss mit Wein zu kochen. The name fondue comes from the French fondre, to melt. It became the Swiss national dish largely thanks to the Swiss Cheese Union, which promoted it from the 1930s to sell more cheese.

Questions
Is fondue higher than raclette?
Slightly. A fondue evening is about 980 kcal and a raclette about 900.
Does the wine in fondue add calories?
A little, most of the alcohol cooks off. The cheese and the bread are the main part.
How much protein is in fondue?
About 50 g a person over an evening.
Is fondue lower with potatoes instead of bread?
A bit, gram for gram boiled potatoes have about a third of the calories of white bread, around 85 against 265 per 100 g. The cheese stays the same.
Does the cheese mix change the calories?
Not much. Gruyère, Emmental, Vacherin and Comté are all hard cheeses at roughly 350 to 410 kcal per 100 g, so a moitié moitié and an all Gruyère pot come out close.
