Lángos is a flat disc of yeast dough, often with some mashed potato worked in, deep fried until it's crisp outside and soft inside. It's the food of Lake Balaton beaches, Slovak swimming pools, summer festivals and the Christmas markets in Budapest and Bratislava.

The plain one, rubbed with garlic, is 350 kcal: 45 g of carbs, 15 g of fat and 8 g of protein. A lot of that fat is frying oil the dough soaks up.

The classic toppings add about 300 kcal. Loaded, it's 650 kcal with 65 g of carbs, 35 g of fat and 18 g of protein. Even a modest handful of grated cheese, about 30 g, is around 107 kcal, and most stalls pile on more.

At a Christmas market it sits next to the chimney cake, and a whole one of those is about 700 kcal. So count a loaded lángos as lunch.

Tips

  1. 1Pick two of the three: garlic and cheese without the sour cream, or garlic and sour cream without the cheese.
  2. 2Share one between two. They're often as wide as the plate.
  3. 3Eat it at the stall while it's hot. Cold lángos is just oily bread.

Where it comes from

Lángos takes its name from láng, the Hungarian word for flame. It was once made from the last scraps of bread dough and baked right by the open flame of the brick oven, as breakfast on baking day. The idea probably came with the Turks in the 16th century. When home bread ovens disappeared in the 20th century, people started frying it instead, and that is the lángos you know.
