Portion
To burn it off

Eggs Benedict is a toasted English muffin, ham, a poached egg and hollandaise, done twice. It's 30 g of protein, 35 g of carbs and 48 g of fat.
The hollandaise is butter and egg yolk whisked together, so that's where most of the fat comes from. It's also why it's so good.
Royale swaps the ham for smoked salmon and Florentine swaps it for spinach. The sauce stays, so they land in a similar place.
Tips
- 1Ask for the hollandaise on the side and dip.
- 2Order one half with a side salad or fruit if the café does halves.
- 3Have it as brunch and treat it as two meals, not one plus lunch.
Where it comes from
Eggs Benedict comes from New York in the late 1800s, but two stories compete. One says chef Charles Ranhofer of Delmonico's made it for regulars named LeGrand Benedict. The other says stockbroker Lemuel Benedict ordered toast, bacon, poached eggs and hollandaise at the Waldorf in 1894 to cure a hangover. Nobody can say for sure which is true.
