To burn it off
Toshikoshi soba means year crossing soba. In Japan you eat a bowl of buckwheat noodles in hot dashi broth on New Year's Eve, often late in the evening before the temple bells.
A bowl is about 380 kcal, with 15 g of protein, 65 g of carbs and just 5 g of fat. It is one of the lightest big dishes on any New Year table.
The long noodles stand for a long life, and they snap easily, which is meant to cut off the bad luck of the old year. A tempura prawn on top is common and adds to the count.
Tips
- 1Have it with spring onion and a little seaweed instead of tempura.
- 2Leave some of the broth in the bowl. It is mostly salt, not calories, but you will sleep better.
